Unit description

Examines the concept of sustainability from environmental , economic, social- cultural and historical perspectives. Students are introduced to sustainability issues facing the Tourism and Hospitality industries and strategic solutions are explored . Topics covered include environmental externalities, social entrepreneurship , eco-design and sustainable development as a business priority.

Unit content

Topic 1: Defining sustainability from a historical, environmental, economic and socio-cultural perspective.

Topic 2: Corporate social responsibility, corporate governance and social entrepreneurship.

Topic 3: Externalities of hotel operations and environmental accounting

Topic 4: Water, energy and waste management

Topic 5: Sustainability and the hospitality customer experience

Topic 6: Environmental management systems and certification

Learning outcomes

contextualise sustainability and sustainable development concepts and issues

Evaluate the positive and negative environmental externalities within hospitality and tourism operations for different stakeholders

analyse sustainability as an integral component of business strategies and operations

devise solutions to the challenges facing tourism and hospitality industries in managing sustainability
